December, 2005. Abemama, Kiribati. If you've ever wondered what fresh heart of coconut palm looks like, now you know. This is just a small chunk of the edible portion, which is the bud from which the fronds issue. That's a 32 ounce mayonnaise jar beside it for scale. Heart of palm tastes like sweet cabbage and is wonderfully crisp - a real treat in places where fresh salad is literally unheard-of. The salad made from this is called "Millionaire's Salad" because you need to cut down a fair-sized coconut palm to get the heart. Because it's rare that anyone would destroy a healthy coconut palm, you will seldom obtain this delicacy. In this case, we're friends with someone who has access to surplus palms in a copra plantation. Yum! |
